Healthy Peanut Butter Chocolate Chip Granola Bars

I have a secret to share with you:

The easiest, quickest, and tastiest granola bars ever. 

Actually, these have more of a cake-like texture than a crunchy granola bar, and they're about as delicious. You're welcome! Oh, and they're healthy too. Hollaaaa! 

I try to eat pretty healthfully, so these include whole flake oats, almond milk, stevia-sweetened chocolate chips, and all natural peanut butter. Is anyone else on the Adam's Peanut Butter bandwagon with me? We go through it like crazy in my house. It's 100% natural (2 ingredients: peanuts and a dash of salt), and because of that it tastes delish and gets my healthy seal of approval. I even add it to my morning smoothie, so it's no surprise that I've found a way to add it to these bad boys!

(Side note: because it's all-natural, store it upside down to keep the oil from rising to the top of the jar).

These are the perfect grab and go snack that are healthy and filling at the same time. Without further ado, here are the goods:

Ingredients:

  • 2.5 Cups Large Flake Oats
  • 1/4 Cup Brown Sugar
  • 1 Tsp Each: Baking Powder, Salt, Cinnamon, Vanilla Extract
  • 1/2 Cup Unsweetened Vanilla Almond Milk
  • 1 Large Egg
  • 2.5 Ripe Bananas
  • 1/3 Cup Adam's 100% Natural Peanut Butter (I used Creamy, but the Crunchy would be delish as well)
  • 1 Cup Semi-Sweet Chocolate Chips (I used Krisda No Sugar Added Natural Chocolate Chips)

Directions:

  • Preheat oven to 350 degrees. Mix oats, sugar, baking powder, salt, cinnamon, and chocolate chips.
  • In a separate bowl, mash bananas and add egg, almond milk, vanilla, and peanut butter.
  • Add to oat mixture and combine well.
  • Pour into a parchment paper-lined baking sheet and bake 20-30 minutes, or until baked through and edges browned. Enjoy!
