Proscuitto, Asparagus & Goat Cheese Pizza
Dubbed "the best blog meal yet" by the boyfriend, I could easily make this a once a week staple.
Ingredients:
- 9 thin asparagus stems
- 2 tbsp extra virgin olive oil
- 1 thin pizza crust or flat bread
- 540ml can italian seasoned chunky stewed tomatoes
- 100g tube of goat cheese (I used the fine herb varietal)
- Approx. 100 g proscuitto
- 3 tablespoons of chopped marjoram / OR / 1 tbsp dried marjoram
- 1/4 teaspoon red pepper flakes
How to:
- Preheat oven or BBQ to 400 degrees F
- Trim asparagus and cut into 1 1/2" pieces
- Mix asparagus with olive oil in side mixing bowl
- Top pizza crust or flat bread with strained tomatoes and olive oil asparagus
- Bake for 7 min
- Remove from oven, add goat cheese, proscuitto, marjoram and red pepper flakes.
- Return to oven for 9 minutes and serve
