Proscuitto, Asparagus & Goat Cheese Pizza

I always treat myself to one meal on Sundays when I can have whatever I want. Usually it’s pizza, which is my favorite indulgence.

Dubbed "the best blog meal yet" by the boyfriend, I could easily make this a once a week staple. 

Ingredients: 

  • 9 thin asparagus stems
  • 2 tbsp extra virgin olive oil
  • 1 thin pizza crust or flat bread
  • 540ml can italian seasoned chunky stewed tomatoes
  • 100g tube of goat cheese (I used the fine herb varietal)
  • Approx. 100 g proscuitto
  • 3 tablespoons of chopped marjoram / OR / 1 tbsp dried marjoram
  • 1/4 teaspoon red pepper flakes

How to: 

  • Preheat oven or BBQ to 400 degrees F
  • Trim asparagus and cut into 1 1/2" pieces
  • Mix asparagus with olive oil in side mixing bowl
  • Top pizza crust or flat bread with strained tomatoes and olive oil asparagus
  • Bake for 7 min
  • Remove from oven, add goat cheese, proscuitto, marjoram and red pepper flakes. 
  • Return to oven for 9 minutes and serve
