Broiled Grapefruit with a Twist
Good morning and happy monday! I'm back from blogpodium and feeling a little tired today so I thought since most people don't want to put a ton of energy into food prep on mondays, I'd share a super simple recipe for ya today!
A few weeks back I shared my blogger brunch that I hosted leading up to blogpodium. I wanted to have a variety of yummy and semi-healthy food on hand (I know, I know - donuts are NOT healthy, hence all the fruit! haha) and rather than having just halved grapefruit, I thought I'd broil them.
Normally you top broiled grapefruit with brown sugar but James and I ran out and I didn't realize it until the morning of the brunch! #hostessfail
SO- in a pinch, I used coconut sugar from SPUD instead and the results were delish!
To make this simple but delicious breakfast treat, all you need is to set your oven to broil then slice your grapefruits in half. You can pre cut sections of the grapefruit to make it easier to eat and then sprinkle with 1-2 tsp of coconut sugar.
Broil until the sugar melts and the edges brown and you're done! To make it extra fancy, garnish with fresh mint and you're set. The simplest breakfast ever that looks waaaay more impressive than it is! Bon appetit! XO
