Dinner With SPUD
Stumped for supper? I've got ya covered! I love to make meals that are a) quick and healthy and b) give me lots of leftovers so that I don't have to make lunches for a few days later! haha This quiche perfectly fits the bill. It's super simple, healthy, totally delicious and makes enough for dinner and two lunches! I don't know about you, but I call that a win!
Inspired by SPUD's Quiche Bundle - I decided to make a yummy vegetarian quiche that tastes even better the day after you make it.

Now enough about that, read on below to learn how to make this recipe for yourself!
Here's What You Need:
1 pie crust
Olive Oil
1/2 cup shallots or onion
1/2 cup chopped peppers
1/2 cup mushrooms
1/2 cup chopped spinach
1/2 cup chopped tomatoes
1 cup shredded cheese
1/2 cup skim milk
3 eggs
Salt and Pepper to taste
Here's what you do:
Preheat the oven to 400 degrees
Chop up your veggies and sautee the vegetables until soft (I add the tomatoes and spinach last)
Pre-bake your pie crust according to directions then remove
Place a layer of cheese in the bottom of your crust then layer in the veggies (3/4 cup)
Whisk the eggs, milk and salt and pepper then pour mixture over vegetables in the pie crust
Top with remaining cheese and bake 35 - 40 minutes
Let cool for a few minutes then dig in! I hope you enjoy this simple recipe as much as I do!
