Vegan Cinnamon Quinoa Breakfast Bowl
I'm a big fan of all things quinoa and as you might remember from this apple cinnamon breakfast quinoa bake, I even include it in my breakfasts! One of my weekend morning go-to's as of late has been this warm and sweet cinnamon quinoa breakfast bowl. It's easy to make, takes only a few ingredients and can be topped with whatever tickles your fancy. Here's how you make it...
To make the base of the bowl, you'll make quinoa the way you typically would, but replace water with almond milk. Make sure to rinse your quinoa first before cooking. I like to use this unsweetened almond milk but you can use any almond milk of your choosing! To add the cinnamon flavor, take a few cinnamon sticks (or cinnamon powder) and put them in the pot with the quinoa while it cooks. To bulk up this breakfast I also add about 1 tbsp of chia to the mix (when I use 1/2 cup of quinoa) to add even more goodness to the breakfast. Cook away as you normally would with quinoa then set aside when it's done!
Next come the toppings. Give the quinoa a try and if you want to add a bit more cinnamon, sprinkle some more on and I like to drizzle a bit of maple syrup to add some sweetness. From there it's up to you to add whatever you'd like! Lately I've been topping my bowl with strawberries, raspberries and blackberries and it makes for a delicious and healthy bowl!
