Date & Cocoa Energy Bites

You guys might remember that last week I spoke about my Glow Juicery Raw Food Cleanse that I did, and that the food was incredible. After the cleanse I was inspired to try out a few new recipes in hopes I could get close to recreating some of the delicious food I ate. After a bit of trial and error I've found the perfect combo for a snack that is absolutely delicious and totally guilt free, with a hint of sweetness and cocoa which is exactly what I was looking for. Using fresh and natural ingredients from SPUD  I've finally mastered these date and cocoa energy bites that are the perfect afternoon pick me up snack. I usually eat one or two around 2:30 when I get the mid-afternoon hungries and they fill me up until I get home for dinner!

Here's what you'll need:

-1 cup of medjool dates

-3/4 cup of almonds

-1/4 cup of shredded unsweetened coconut

-1/4 cup other nuts of your choice (I use peanuts)

-2 tablespoons of chia seeds

-2 tablespoons ground flax seeds

-1 tablespoon coconut oil

-1 tablespoon hemp protein powder

-1 tablespoon Epicure cocoa powder

Here's what to do:

Blend the nuts, chia seeds, hemp protein powder, cocoa powder and flax seeds in a blender until they form a powder. Then add the shredded coconut, coconut oil and pitted dates (I usually cut mine into a few pieces) into the blender and mix until blended together. Note: my blender is pretty crap (I feel as though the purchase of a vitamix is imminent in my future) so I actually pour out half of the powder, mix in the rest of the ingredients to blend and mix slowly, then add the rest of the powder as the dates start to blend. Once the mixture is a sticky paste you'e ready to roll away! I usually get 13-15 little bites depending on how small I roll them.

Tip: You might find if you try to "roll" the bites that they crumble so rather, "pack" the bites together and create a ball shape and place on a plate or tray. Place the plate or tray in the fridge for the bites to harden and they'll stick together a bit better.
