Chocolate Chip Banana Muffins
This is actually one of my favourite recipes - one that my mom made for my sisters and I as kids and that I'm continuing to make to this day! They're beyond simple and I don't even try to put a healthy spin on them like I tend to do with most baking (which of course always results in slightly less deliciousness results). The banana/chocolate combo is something that I just don't want to mess with!
I had some frozen bananas in my freezer last week, and since we're moving soon I thought I'd clear them out to get our house as close to 'Mother Hubbard' status as I can before the big day. I'm now also 3 days past my due date so you might say that nesting has taken over! I whipped up a batch and they were gone in no time. Yum. Check out the recipe below!
First, pull out all of your ingredients:
DRY
- All Purpose Flour (1 3/4 Cups)
- Granulated Sugar (1/2 Cup)
- Baking Powder (3 Tsp)
- Salt (1/2 Tsp)
Semi-Sweet Chocolate Chips (1/2 Cup) ... I always use more than this. YOLO.
WET
- Egg (1)
- Cooking Oil (1/4 Cup)
- Milk (1/4 Cup)
- Mashed Bananas (3 Medium)
Set your oven to 400 degrees F.
Mix the dry ingredients together.
Whip the egg until frothy and then combine it with the rest of the wet ingredients.
Carefully stir the wet ingredients into the dry ingredients and be really careful not to over stir! The lighter and fluffier the muffins, the better.
Pop them into the oven for 20-25 minutes, until they're baked through a getting a bit golden on top. These bad boys are always good, but they're the best when they're still warm and the chocolate chips are melted.
