Healthy 10 Minute Tacos

I don't know what it is about summertime that makes me want tacos but at soon as the days get longer and the temperatures rise I find myself wanting tacos all the time! (Tell me I'm not alone! haha) Seeing as I'm on a pretty strict diet right now, I obviously can't have real tacos so I've found a diet approved recipe that's also delicious as just a healthier option so today I thought I'd share the recipe since I had tons of people asking me about these when I shared them on my Instagram stories! 

What's especially great about these healthier 'tacos' are that they use romaine lettuce as the 'shells' (fewer cals, lower fat, but still some crunch) and they take seriously, ten minutes to make. And no, I'm not lying

Here's the how to..... (note, this recipe and these measurements are for a single serving, aka enough of the mixture to fill 3 leaves so double or multiply the ingredients as necessary!)

You'll need

- 120-150 g ground chicken breast or extra lean ground beef (weighed raw)

- 1 cup of cherry tomatoes, halved

- 1 clove of garlic and 1/2 shallot chopped finely

- 2-3 romaine lettuce leaves (I buy mine pre-washed and already separated on particularly busy weeks - saves time and makes sure I actually use the lettuce vs letting it wilt in the fridge)

- Salt + Pepper to taste

 

Begin by adding your onion and garlic to a pan with a splash of water and turn the heat on about level 4-5 and heat until they begin to soften. I can't use any oils on my diet so I've actually been using water and it's working great! Add your meat and once the meat begins to brown add in the cherry tomatoes. (You may need to add a bit more water or if you're using oil, use accordingly) Give the ingredients all a stir and keep the heat at level 4. Cover the pan with a lid and set a timer for 4 minutes. After that time the tomatoes will have softened and you can press them down using your wooden spoon and mix together with the meat. The tomatoes will create a 'sauce' for the mixture so continue to mix well. Cook for another 3-5 minutes and season with salt and pepper. 

Once the meat mixture is done all you need to do is spoon into the romaine lettuce leaves and you're set!! For me that's all I can have but to garnish and finish them off you could sprinkle them with a bit of shredded cheese, chopped green onions, hot sauce or any other toppings you might like

These are SO quick, SO easy, SO healthy and also SO delicious so they make for a great quick and healthy weeknight meal!
