Watermelon Pizza, Two Ways
With my favourite unofficial holiday just around the corner I wanted to whip up a simple recipe that would pair perfectly with my favourite Rosé and it turns out, I found two! I've been seeing watermelon 'pizza' popping up all over Pinterest the past few weeks so I thought I'd whip up two variations of my own.
This healthy snack is simple and oh so easy and seriously only takes a matter of minutes to make. The first 'pizza' I made was a sweet pizza with greek yoghurt and fresh fruit.
To make the 'pizzas', start by slicing the watermelon into disks at the widest part of the circumference. For the first pizza I used greek yoghurt and spread a think layer on top of the watermelon. You could also use whipped cream for a more indulgent treat too! I then sliced blueberries, grapes, strawberries and cherries and sprinkled on top, slice and it was ready to enjoy! It's really as simple as that folks, you can use whatever fresh fruit you have on hand and try endless combinations! Next, on to the savoury.....
Next up was my greek salad inspired 'pizza'. Sliced olives, crumpled feta and fresh mint drizzled with balsamic glaze made for a drool worthy snack that James and I devoured in no time flat.
